I’ve been trying to eat healthier for a while now. I spent most of my life being pretty unhealthy and it really sucks. I’ve been overweight since I was 10 years old. I was put on Topamax a couple of years ago and I lost 50 pounds which was great but unfortunately, Topamax has a tendency to stop working which I wrote about here. So I gained all the weight back. Aside from that, I also have PCOS, pre-diabetes, and I was recently diagnosed with hypothyroidism. But I decided to turn things around. So I’ve been eating less, eating foods with fewer carbohydrates, and working out. I’m happy to say that so far I’ve lost 23 pounds in about 2 months.
Low Carb Cooking
I’ve always lived on a diet of high carb foods. Sure, I can eat things like bacon and eggs but anyone that knows me will tell you I’m a pizza fiend. Give me pizza, breadsticks, pasta! But seriously, I can’t live like that anymore. At least, I can’t eat that stuff every freaking day like I’ve been doing most of my life. If I don’t change my ways I’m going to continue to feel like crap until I die prematurely and I don’t want that. But I still want to find ways to enjoy the foods I love, even if just occasionally. So I’ve been looking around for recipes and ideas online and experimenting.
Low Carb Copy Cat Little Caesars Zesty Bread Using Lavash Bread
In some of the low carb dieting groups, I noticed some people posting about Joseph’s Lavash bread. Lavash bread is a soft, thin unleavened bread. It’s used a lot throughout the Middle East. Joseph’s Lavash bread is only 5 carbs, 60 calories, and 5 grams of protein per serving. A serving is half of one piece. Look at the picture below, that’s a pretty big serving. Some people were saying you could use it to make pizza really easily. So I tried it. It worked really well. And then that’s what got me thinking… Could I figure out how to make a low carb version of Little Caesars Zesty bread?
Fortunately, my local Little Ceasers sells the jalapeno sauce they use in their zesty bread (if it isn’t what they use it’s pretty close) and they also sell a blend of spices called a “Zap Pak!”. I’m not sure if all locations sell that stuff or not but I think they do. Now, I’m an okay cook. But I’m not about to try to figure out what they put in their special spice blend. They kinda sorta list it in the ingredients by listing some things but also listing “spices”. And for all I know, they may not even use that blend in their zesty bread. But I used it in this recipe and I, my boyfriend, and my roommate all feel like I got pretty dang close to actual zesty bread. So, for now, I’ll assume they do. 🙂
So if you decide to make this it’s actually really easy.
- lavash bread (If you can’t find it at your local store you can get it online from Amazon.)
- butter (If you make a whole sheet of bread you’ll probably need about 1/2 a stick.)
- shredded mozzarella cheese (The amount depends on how much you want.)
- grated parmesan cheese (Also depends on how much you want.)
- Little Caesars Zap Pak! spice blend (Or create your own spice blend but it might taste a little different.)
- Little Caesars jalapeno sauce
- a pinch of salt
- a pinch of garlic powder
Step 1: Cut the lavash bread into whatever size you want your pieces of faux zesty bread to be.
Step 2: Melt some butter in a frying pan on medium heat.
Step 3: Dip the bread in the butter and coat both sides.
Step 4: Cover the top with as much mozzarella cheese as you’d like. Then add some parmesan cheese.
Step 5: Add some spices from the Zap Pak spice blend to taste.
Step 6: Add a pinch of salt and a pinch of garlic powder.
Step 7: Let the bread fry until it’s at a crispiness you like but be careful not to let it burn.
Step 8: Put as much or as little jalapeno sauce on top of each one as you’d like.
Step 9: Enjoy! 🙂
These tend to be very, very greasy but if you’ve ever had real zesty bread you know it’s pretty greasy too. But it helps a tiny bit to put it on some paper towels so they can absorb the excess grease. Remember, a large part of the real thing is bread, so these won’t taste exactly like zesty bread, but if you’re really missing the real thing it’s not a bad substitution while you’re on a low carb diet. And I don’t know about you but for me, that’s going to be forever. I can’t go back to my old ways of eating.
No Calorie Or Carb Count?
I didn’t list calorie or carb counts with this recipe because it depends on how big you make each piece of bread, how much sauce you put on each one, and even what brand of shredded cheese you use matters. Some brands of shredded cheese have carbs (because they have to add starch to keep it from clumping together). Of course, I suppose you could avoid that by shredding the cheese yourself. I’m too lazy for that though.
